Healthy Go-To Quesadilla Lunch

In an effort to avoid serving my kids macaroni and cheese twice a day, I came up with what I think is a more healthful–but equally yummy and tasty–quesadilla recipe.

Sometimes I make this in the morning (or the night before) to go in their school lunch, because it’s even tasty cold. When I serve these for dinner, I gussy them up with avocado and greens (and salsa for the grownups).

Why are these quesadillas healthier? For one thing, the tortillas I use are sprouted. And of course beans offer protein and iron. I try to keep the cheese to a minimum, and you can definitely add veggies to the degree that your kids will tolerate them–we’ve done baby kale and sliced bell peppers.

    I’m surprised to see you using Horizon organic products, because I have read, through multiple sources, that they really don’t live up to organic standards. Here is a sample link:

    I buy these tortilla shells and freeze them but I can never thaw them well. Any suggestions on how to thaw them. Miner always turnout tough.

    I like to keep it simple at lunch. Loving the low mercury, low sodium tuna options from thrive. We do avacado, tuna sandwiches. And… After all this Mac and cheese debacle.. seriously, made from scratch is very.. easy. If you never start your kids on boxed, they won’t be hooked on the high sodium etc. Make a big batch of organic cheese, whole wheat noodle, Kerry gold cheese, nutmeg yummy goodness and freeze small portions to feel good about pulling out for your kids rather than pthlates! Come on… You can even make it a kid cooking project.
