So this is kind of like that cookie that those girls sell. You know, all thin and minty, But I like this one better. These crisp little organic cookies are made with spelt flour and sweetened with only pure Vermont maple syrup. 2 boxes of 10 cookies
A note from health coach Suzanne: I typically like to bake my own cookies, but when I am in a pinch for a dessert I found these cookies to be the healthiest I can find. What I love about them is that they are all sweetened without refined sugar–only with with maple syrup. Also, the flour is organic spelt flour, which has slightly more protein and fewer calories than all-purpose flour. Spelt is good source of vitamin B2, manganese, niacin, copper, phosphorus, protein, and fiber. The fat in these cookies is sunflower oil. It has some health benefits, but like many oils it has detriments especially when heated. Sunflower oil is high in omega-6 fatty acids. Omega-6 fatty acids are oversupplied in the Western diet, while the crucial omega-3s are undersupplied. The resulting imbalance contributes to cardiovascular disease and inflammatory response in the body. When heated, sunflower oil produces toxic substances called aldehydes that may increase one’s risk of cancer. Deep frying produces the most aldehydes, but sunflower oil generates more aldehydes than other oils regardless of the cooking method. Experts recommend low-heat cooking methods when using sunflower oil. Baking is considered a medium heat method, which is better than high heat. Coconut oil and butter are my go to fats for baking, but they are saturated fat so that presents a different health risk. The bottom line is that these cookies are healthier than any store bought cookies we’ve found.
