There's no single cookware material that's best for every recipe. Instead of replacing your entire kitchen with one type of pan, we recommend building a collection of high-quality cookware that plays to the strengths of each material.
Stainless Steel: The Workhorse
If we could only keep one type of cookware, it would probably be stainless steel. It's the pan we reach for most often because it's incredibly versatile, built to last, and doesn't rely on chemical nonstick coatings. Once you learn how to properly preheat it, stainless steel becomes much easier to cook on than many people expect.
Cast Iron: For High Heat & Incredible Flavor
When we want the perfect sear on a steak or beautifully roasted vegetables, cast iron is hard to beat. Yes, it's heavier and requires a little more maintenance, but the cooking performance makes it well worth having in your kitchen.
Ceramic: Convenient, But Not Forever
Ceramic cookware is great to have around, especially for delicate foods like eggs and pancakes. We like it as part of a cookware collection, but not as a complete replacement for stainless steel or cast iron because ceramic coatings naturally wear over time.
