Cacao plants are efficient accumulators of heavy metals from soil — particularly lead and cadmium. Lead contamination often occurs post-harvest, when cacao beans dry on the ground and absorb lead from soil and dust. Cadmium is absorbed through the roots from naturally occurring or industrial soil contamination, particularly in Latin American growing regions. A 2022 Consumer Reports study found concerning levels of lead and cadmium in 28 of 28 dark chocolate bars tested, including many organic and premium brands. Higher cacao percentages generally mean higher heavy metal concentrations, which is why testing matters more than organic certification alone.
2. What to Look for in a Safe Chocolate Brand
The safest dark chocolate brands proactively test for heavy metals and publish or share results. Single-origin chocolate from regions with lower cadmium soil levels — such as parts of Africa and Madagascar — tends to test cleaner than chocolate from Ecuador, Peru, or Venezuela, which have historically higher cadmium levels. Brands that use cacao from multiple origins and blend for flavor often can’t guarantee consistent heavy metal levels. Cacao powder and drinking chocolates concentrate the cacao solids and therefore tend to have higher heavy metal levels than bars — so sourcing matters even more for powder.
3. How Much Dark Chocolate Is Safe to Eat?
Context matters. For most healthy adults, 1 oz of high-quality dark chocolate daily is within reasonable safety thresholds — especially from brands that test clean. Children, pregnant women, and people with compromised detoxification should be more cautious and stick to lower amounts and the cleanest-testing brands. The goal isn’t to avoid dark chocolate — it’s to choose brands that take heavy metal testing seriously so you can enjoy it confidently.
